ONION TOMATO CORIANDER CHUTNEY
Ingredients:
Onion - 1
Tomato - 1
Garlic - 4
Ginger - 1/2 inch piece
Tamarind - 1 pinch
Red Chilly - 2
Kashmiri Red Chilly - 3
Mustard - 1 t spoon
Urad Dal - 1 t spoon
Coriander Seeds - 1 t spoon
Curry Leaves - 1 spring
Oil - 2 tbl spoon
In a pan fry 1/2 t spoon mustard, 1/2 t spoon urad dal, 1 t spoon coriander seeds, ginger and garlic in 1 tbl spoon of oil for a minute.
Add the onion, tomato, red chilly and Kashmiri red chilly and fry till lightly mushy.
Cool and grind the chutney with salt and a pinch of tamarind.
Now prepare the tempering by heating 1 tbl spoon of oil.
Add 1/2 t spoon mustard, 1/2 t spoon urad dal, curry leaves and add allow it to splutter.
Add the chutney and give a quick boil.
Serve onion tomato chutney with hot idly or crispy dosa.
