CURD RICE
Ingredients:Rice - 1 cup
Curd - 1 tbl spoon
Butter - 1 tbl spoon
Salt as needed
Mustard - 1/2 t spoon
Milk - 1/4 cup
Green Chilly - 1
Ginger - 1/2 inch piece
Curry Leaves - 1 spring
Coriander Leaves - 1 t spoon
Carrot - 1/2
Cook rice and allow it to cool.
Mash the rice along with butter and curd.
Add salt and milk and mix well to form a creamy rice.
Then add 1/2 t spoon oil in a Kadhai and fry mustard seeds, chopped ginger, chopped green chilly and curry leaves until crispy.
Add the tempered items to the curd rice.
Add grated carrot and chopped coriander leaves and give a quick stir.
Serve creamy curd rice with pickle or murukku vathal!
NOTE:
We can also add a tbl spoon of fresh cream along with curd rice to get a more creamy texture.
We can add pomegranate or dry grapes in the final stage.
