STUFFED BRINJAL
Ingredients:Brinjal _ 4
Chilly Powder _ 1 t spoon
Coriander Powder _ 1 t spoon
Turmeric Powder _ 1/4 t spoon
Salt as needed
Cumin Powder _ 1/2 t spoon
Ginger Garlic Paste _ 1 t spoon
Coconut Oil _ 1 tbl spoon
Slit brinjal towards the stem part. Do not cut fully.
Mix all the above ingredients with oil to a fine paste.
Apply the masala paste in between the slits.
In a heavy bottomed pan, add 1 tbl spoon oil and cook the brinjal in low flame covered with a lid.
Once the brinjal is cooked soft, switch off the flame.
Our spicy stuffed brinjal is ready to enjoy.
