SET DOSA/ SPONGE DOSA

 SET DOSA

Ingredients:
IdlyRice - 2 cup
Urad Dal - 1/2 cup
Poha / Aval - 1 cup 
Salt as needed 
Fenugreek Seeds - 1 t spoon 



      Wash and soak idly rice, urad dal separately in water.
      Add fenugreek seeds and soak along with urad Dal.
      Soak in enough water for 4 hours.



      Now drain water from urad Dal and grind together with salt, washed poha until fluffy.



      Add more water if needed.
      Now transfer the urad Dal flour to a bowl.
      Add soaked rice to the mixi jar and grind with water finely.


      Transfer this to the same bowl.



      Mix well with hands and allow to ferment overnight.
      The dough raises after fermentation.


      Add enough water to the dough to get semi thick consistency.
      In a hot dosa tawa, pour the flour and gently stretch lightly.
      Sprinkle some oil and cook in low flame closed with a lid.


      We can remove the dosa from flame or turn the dosa and cook for 2 minutes.


      Enjoy set dosa as such or sprinkle some idly podi above the dosa and enjoy with your favourite chutney.
