PARUPPU KEERAI KOOTU
Ingredients:Spinach/ Greens _ 2 cups
Thoor Dal _ 1/4 cup
Onion _ 1
Tomato _ 1/2
Green Chilly _ 1
Tamarind _ 1/2 lemon size
Turmeric Powder _ 1/4 t spoon
Salt as needed
Sambar Powder _ 2t spoon
Oil _ 1 tbl spoon
Mustard _ 1/2 t spoon
Red Chilly _ 2
Asafoetida _ 1 pinch
Coconut milk _ 1/4 cup
Clean, wash and cut spinach into small pieces.
In a pressure cooker add keerai, washed toor dal, chopped onion, tomato, salt, turmeric powder, sambar powder, 1/2 cup water and close the lid.
Cook for 5 whistles in medium flame.
Once pressure releases, open the lid and smash the dal and spinach with a ladddle.

In a pan heat oil, mustard seeds, Red chilly, asafoetida and pour the cooked spinach dal.
Soak tamarind in water and pour the exact.
Add coconut milk and let the kootu boil for 5 minutes.
Switch off the flame and add 1 t spoon of ghee.
Enjoy purupu keerai with rice.
