POTATO FRY

POTATO FRY 

Ingredients:
Potato - 3
Turmeric Powder - 1/4 t spoon 
Salt as needed 
Garam Masala - 1/2 t spoon 
Chilly Powder - 1 1/2 t spoon 
Coriander Powder - 1 1/2 t spoon 
Rice Flour - 1 tbl spoon 
Fennel Seeds - 1/2 t spoon 
Garlic - 4
Curry Leaves - 1 spring 
Oil - 4 t spoon 


      Cut potato into small pieces.
      Cook the potato in water for 10 minutes. Do not overcook.
      Drain excess water and add salt, garam masala, chilly powder, coriander powder, rice flour, turmeric powder to the potatoes.



      Mix with little water so that the masalas gets coated well with the potatoes.
      In a heavy bottomed pan, heat oil and add the potatoes.


      Grind together garlic, curry leaves, fennel seeds to a course powder and add to the potatoes.



      Cook in low flame until golden and crisp. Roast the potatoes for at least 20 minutes stirring occasionally.



      Enjoy spicy potato fry with rice.
