VATHA KUZHAMBU

 VATHAL KULAMBU 

Ingredients:
For Masala Powder:
Coriander Seeds - 3 t spoon 
Red Chilly - 3
Toor Dal - 1 t spoon 
Pepper - 1 t spoon 
Fenugreek Seeds - 1/2 t spoon 
Cumin Seeds - 1/2 t spoon 
Asafoetida - 1 pinch
For Kulambu:
Manthakkali Vathal - 2 tbl spoon
Small Onion - 20
Garlic - 20
Tamarind - 1/2 lemon sized
Oil - 3 tbl spoon 
Salt as needed 
Turmeric Powder - 1/4 t spoon 
Kashmiri Red Chilly - 1 1/2 t spoon 
Dry Red Chilly - 1
Curry Leaves - 2 spring 
Mustard Seeds - 1/2 t spoon 
Fenugreek Seeds - 1/4 t spoon


      Dry roast the ingredients under masala powder in low flame for 5 minutes.



      Grind to a fine powder.


      Heat oil in a pan and add mustard.
      Once it splutters add fenugreek seeds, curry leaves, red chilly and manathakkali vathal.


      Fry in low flame until the vathal gets well fried and crisp.
      Now add garlic, onion and fry for 5 more minutes.


      Add turmeric powder, Kashmiri chilly powder, salt, tamarind water and 1/4 cup water.


      Close with a lid and cook until the kulambu thickens.


      Add the ground vatha kulambu powder and mix well.


      Simmer for 5 minutes and switch off the flame.


      Enjoy vatha kulambu with hot rice.
