VALAKKAI COCONUT CURRY
Ingredients:Raw Banana - 1
Coconut - 2 tbl spoon
Red Chilly - 2
Garlic - 5
Pepper - 1/2 t spoon
Coriander Seeds - 1/2 t spoon
Cumin Seeds - 1/2 t spoon
Onion - 1
Tomato - 1/2
Curry Leaves - 1 spring
Coconut Oil - 2 tbl spoon
Grind together coconut, red chilly, garlic, cumin, coriander, pepper to a coarse powder.
Cut valakkai into bite sized pieces.
In a pan heat oil, add onion, curry leaves, tomato and fry for a minute.
Add banana, ground powder and mix well.
Add little water and cover with a lid.
Cook for 5 minutes in low flame.
Now open the lid and roast the banana in medium flame until the banana gets dry and slightly browned.
Enjoy banana coconut curry with rice.
