KOVAKKAI FRY/ KOVAKKAI DRY CURRY

KOVAKKAI PORIYAL 

Ingredients:
 Kovakkai - 1/4 kg
Salt as needed 
Onion - 1
Tomato - 1
Ginger Garlic Paste - 1 t spoon 
Curry Leaves - 1 spring 
Turmeric Powder - 1/4 t spoon 
Chilly Powder - 1/2 t spoon 
Coriander Powder - 1 t spoon 
Coconut Oil - 2 tbl spoon 
Pepper Powder - 1/4 t spoon 
Mustard Seeds - 1/2 t spoon 
Cumin Seeds - 1/2 t spoon 
For Marinate:
Salt as needed 
Kashmiri Chilly Powder - 1 t spoon 
Turmeric Powder - 1 pinch 


      Wash and cut kovakkai length wise.
      Add the items for Marinate and mix well.


      Heat a pan with 1 tbl spoon coconut oil, fry the marinated kovakkai until golden and keep aside.



      In the same pan add coconut oil, cumin, mustard and allow to splutter.
      Add chopped onion , curry leaves, tomato and cook until mushy.


      Add ginger garlic paste and sauté until raw smell leaves.


      Add turmeric powder, salt, chilly powder, coriander powder and mix well.
      Add kovakkai and cook until it gets soft.


      Sprinkle some water when needed.
      Once the kovakkai gets cooked well, switch off the flame.


      Enjoy kovakkai fry with rice.
