LADIES FINGER COCONUT CURRY

OKRA COCONUT FRY

Ingredients:
Ladies Finger - 300 gm
Onion - 1
Garlic - 5
Cumin Seeds - 1/2 t spoon 
Oil - 2 tbl spoon 
Curry Leaves - 1 spring 
Peanut - 1 tbl spoon 
Coconut - 1 tbl spoon 
Pepper - 1/2 tbl spoon 
Salt as needed 
Chilly Powder - 1/2 t spoon 
Turmeric Powder - 1/4 t spoon 
Coriander Leaves - 1 tbl spoon 


      Wash and cut ladies finger into bite sized pieces.
      Heat a pan with 1 tbl spoon oil and roast the okra in low flame for 10 minutes and keep aside.




      Heat the same pan with 1 tbl spoon oil and add cumin seeds.
      Fry chopped garlic, onion, curry leaves, coriander leaves for 3 minutes.


      Now add salt, turmeric powder, chilly powder and mix well.


      Add the roasted ladies finger and sauté until it gets cooked soft.


      Grind together coconut, pepper, peanuts to a coarse powder and add to the ladies finger.


      Mix gently and switch off the flame.


      Serve ladies finger roast with rice or chappathi.
