PUDINA RICE/ MINT RICE

PUDINA RICE 

Ingredients:
Rice - 1 cup
Mint Leaves - 1/ 2 cup
Green Chilly - 2
Ginger - 1/2 inch piece 
Garlic - 5
Onion - 1
Salt as needed 
Ghee - 1 tbl spoon 
Carrot - 1
Beans - 5
Water - 2 1/2 cups
Biriyani Leaf - 1
Cloves - 1
Cardamom - 1
Cinnamon Stick - 1
Fennel Seeds - 1/2 t spoon 


      Wash and soak rice for 1/2 an hour.
      Heat ghee in a pressure pan and fry biriyani leaf, cloves, cardamom, cinnamon stick, fennel seeds for a minute.


      Grind together ginger, garlic, mint leaves, onion, green chilly to a fine paste without adding water.


      Add the paste to the pressure cooker and fry for 5 minutes in low flame.


      Add salt, chopped carrot, beans and mix well.


      Add water and allow to boil.


      Add rice and mix well.


      Place the pressure pan in a hot dosa tawa and cover with a lid.
      Place a heavy weight above the pan.
      Simmer for 20 minutes, open the pan and mix gently.


      Enjoy pudina rice with raita and chips.
