SPICY TINDORA FRY / KOVAKKAI ONION CURRY

KOVAKKAI CURRY

Ingredients:
Kovakkai - 1/4 kg
Salt as needed 
Coconut Oil - 2 tbl spoon 
To grind:
Onion - 1
Garlic - 4
Cumin Seeds - 1 t spoon 
Coriander Seeds - 1 t spoon 
Red Chilly - 6


      Sauté together the ingredients for grinding in 1 tbl spoon oil for 5 minutes in low flame.



      Grind to a coarse paste.
      Wash and cut  kovakkai length wise.
      Heat 1 tbl spoon oil and fry kovakkai in low flame covered with a lid.


      Stir occasionally until the vegetable gets completely cooked.
      Add the ground masala paste and mix well.


      Simmer until the masala blends well with the kovakkai and roasted well.


      Enjoy spicy kovakkai onion curry with rice.
