CARROT BEANS COCONUT STIR FRY

 CARROT BEANS PORIYAL 

Ingredients:
Carrot - 4
Beans - 20
Onion - 1
Coconut Oil - 3 tbl spoon 
Mustard Seeds - 1/2 t spoon 
Cumin Seeds - 1/2 t spoon 
Red Chilly - 1
Curry Leaves - 1 spring 
Coriander Leaves - 1 tbl spoon 
Salt as needed 
Kashmiri Chilly Powder - 1 t spoon 
Coriander Powder - 1 1/2 t spoon 
Turmeric Powder - 1/4 t spoon 
Ginger Garlic Paste - 1 t spoon 
Coconut - 3 tbl spoon 


      Cut carrot and beans into small pieces.
      Heat oil in a heavy bottomed pan, add mustard seeds, cumin seeds and allow it to splutter.
      Add red chilly, curry leaves, chopped onion, ginger garlic paste and fry for a minute.


      Now add carrot, beans and cook covered in low flame for 5 minutes.


      Add chilly powder, coriander powder, turmeric powder, salt, coconut powder, coriander leaves and mix well.


      Cook covered in low flame until the vegetables gets cooked soft.


      Serve carrot beans coconut fry with rice.
