TIFFIN SAMBAR/ MOONG DAL SAMBAR

TIFFIN SAMBAR 

Ingredients:
Moong Dal - 1/4 cup
Onion - 1/2
Tomato - 1
Salt as needed 
Turmeric Powder - 1/4 t spoon 
Chilly Powder - 1 t spoon 
Coriander Powder - 1 t spoon 
Green Chilly - 1
Tamarind - 1/2 lemon sized 
Oil - 1 tbl spoon 
Coriander Leaves - 1 tbl spoon 
Potato - 1
Carrot - 1
Beans - 3
Brinjal - 2
To Temper:
Oil - 1 tbl spoon 
Mustard Seeds - 1 t spoon 
Cumin Seeds - 1 /2 t spoon 
Red Chilly - 1
Chopped Onion - 1 tbl spoon 
Curry Leaves - 1 spring 


      Wash moong dal and pressure cook with 1 cup water for 4 whistles.
      Soak tamarind and extract the water.
      Cut the vegetables and keep aside.
      Heat oil in a pan and fry onion, tomato, green chilly, potato, brinjal, carrot, beans for 3 minutes.



      Add 1/4 cup water and bring it to boil.


      Now add salt, chilly powder, coriander powder, turmeric powder, moong dal and mix well.


      Boil until the veggies gets cooked well.
      Add tamarind water and simmer for 5 minutes. Add more water if required.


      Switch off the flame and keep aside.
      Heat oil in a pan add mustard seeds, cumin seeds, curry leaves, red chilly, onion and fry until golden.
      Pour the tadka in the sambar and mix well.


      Add chopped coriander leaves and enjoy moong dal sambar with idly or dosa.
