SAMAI LEMON RICE/ LITTLE MILLET LEMON RICE

 SAMAI LEMON RICE 

Ingredients :
Samai / Little Millet - 1/2 cup
Water - 1 1/4 cup 
Salt as needed 
Turmeric Powder - 1/4 t spoon 
Lemon - 1/2
Oil - 1 tbl spoon 
Mustard Seeds - 1/2 t spoon 
Curry Leaves - 1 spring 
Peanuts - 1 tbl spoon 
Cashewnuts - 5
Asafoetida - 1 pinch 
Red Chilly - 5

  

      Soak samai rice for 1/2 an hour.


      Wash and drain excess water and pressure cook with 1 1/4 cup water in low flame for 2 whistles.


      Once pressure releases open the lid and and fluff it up once cooled.


      Heat oil in a pan and allow mustard seeds to splutter.
      Add broken red chilly, curry leaves, peanuts, cashews, asafoetida, turmeric powder and roast well.


      Squeeze 1/2 lemon and switch off the flame.


      Add the cooled fluffed up samai rice and mix gently.


      Enjoy little millet lemon rice with papad.
