SENA KILANGU FRY
Ingredients:
Sena Kilangu - 1/4 kg
Tamarind - 1/2 tbl spoon
Oil For Deep Frying
Salt as needed
Garlic - 5
Curry Leaves - 2 spring
Fennel Seeds - 1/2 t spoon
Onion - 1
Tomato - 1/2
Chilly Powder - 1 t spoon
Turmeric Powder - 1/4 t spoon
Coriander Powder - 1 t spoon
Remove the skin from yam and cut into bite sized pieces.
Boil with tamarind and water for 5 minutes.
Drain excess water, shallow fry yam in oil and keep aside.
Heat 1 tbl spoon oil, chopped onion, tomato until soft.
Grind garlic, curry leaves, fennel seeds to a course paste and add to the onion.
Roast the masala until raw smell leaves.
Add chilly powder, salt, turmeric powder, coriander powder and mix well.
Add 1/4cup water and allow it to boil.
Add the fried Sena kilangu, fry until the water gets absorbed and roast in low flame for 5 minutes.
Enjoy yam masala fry with rice and rasam.
