BRINJAL SAMBAR
Ingredients:Toor Dal - 1/2 cup
Oil - 2 tbl spoon
Onion - 1
Tomato - 1
Tamarind - 1 small lemon sized
Salt as needed
Turmeric Powder - 1/4 t spoon
Chilly Powder - 1 1/2 t spoon
Coriander Powder - 2 t spoon
Asafoetida - 1 pinch
Curry Leaves - 1 spring
Brinjal - 5
Coconut - 2 tbl spoon chopped
Cumin Seeds - 1 t spoon
Mustard Seeds - 1 t spoon
Wash and pressure cook toor Dal with water for 5 whistles.
Soak tamarind in water and extract the water.
Cut brinjal to small pieces length wise and keep dipped in water.
Grind coconut and cumin with water to a fine paste.
Heat 1 tbl spoon oil and add 1/2 onion, tomato and sauté for a minute.
Add brinjal, turmeric powder, salt, chilly powder, coriander powder and mix well.
Add 1 cup water and allow it to boil.
Add cooked toor Dal and cook in medium flame until the brinjal gets cooked well.
Now add coconut cumin paste and allow to cook for 5 more minutes.
Now add tamarind water and simmer for 5 minutes.
Add water if needed until we get the required consistency.
Switch off the flame and keep aside.
Heat 1 tbl spoon oil in a pan and allow mustard seeds to splutter.
Add curry leaves, asafoetida, 1/2 onion and fry until golden.
Add the tadka to the sambar and mix well.
Garnish with chopped coriander leaves and enjoy brinjal sambar with hot rice.
