SODHI KULAMBU/ POTATO STEW

TIRUNELVELI SODDHI KULAMBU 

Ingredients:
Potato - 2
Moong Dal - 1/4 cup
Coconut Milk - 1 cup thick
Coconut Milk - 1 cup thin
Green Chilly - 4
Onion - 1
Ginger - 1 tbl spoon chopped 
Coconut Oil - 1 tbl spoon 
Curry Leaves - 1 spring 
Salt as needed 


      Pressure cook moong dal and potato and keep aside.
      Grind coconut and extract thick and thin milk separately.


      Heat oil in a pan and fry chopped ginger, curry leaves, slit green chilly.

        Add chopped onion and fry until transparent.
      Now add potato, salt and fry for a minute.


      Add thin coconut milk and cooked moong dal and cook in low flame until lightly thick.


      Now add thick coconut milk and switch off the flame.



      Enjoy Sodhi kulambu with rice and potato.
