EGG KULAMBU

EGG KULAMBU/ UDAICHA MUTTAI KULAMBU 

Ingredients:
Onion - 1
Tomato - 1
 Oil - 1 tbl spoon 
Egg - 3
Salt as needed 
To Grind 
Coconut - 2 tbl spoon 
Onion - 2 tbl spoon chopped 
To dry roast and grind 
Red Chilly - 6
Cumin Seeds - 1/2 t spoon 
Coriander Seeds - 1 t spoon 
Pepper - 1/2 t spoon 
Fennel Seeds - 1/2 t spoon 


     Dry roast cumin, pepper, fennel, coriander, red chilly and grind to a fine powder.
      Grind coconut, onion with water to a fine paste.



      Heat oil in a pan and fry onion, tomato until soft.


      Add coconut onion paste, ground powder, salt and mix well.


      Add 1/2 cup water and allow to boil.


      Once the gravy gets little thick, break open 3 eggs.


      Cover with a lid and simmer for 5 minutes or until the eggs gets cooked.
      Switch off the flame and add chopped coriander leaves.


      Enjoy egg kulambu with rice.
