CARROT RICE

CARROT RICE 

Ingredients:
Basmati Rice - 1/2 cup
Carrot - 1
Oil / Butter - 1 tbl spoon 
Mustard Seeds - 1/4 t spoon 
Fennel Seeds - 1/4 t spoon 
Garlic - 4
Ginger - 1 small piece 
Onion - 1/2
Green Chilly - 1
Salt as needed 
Chilly Powder - 1/4 t spoon 
Garam Masala - 1/4 t spoon 
Turmeric Powder - 1 pinch 


      Cook basmati rice until soft, drain excess water and keep aside.
      Heat butter in a pan and add mustard seeds, fennel seeds.
      Add finely chopped ginger, garlic, green chilly, onion and sauté until golden.


      Now add grated carrot and cook covered in low flame.


      Add salt, chilly powder, garam masala powder, turmeric powder and cook covered for 5 more minutes.
      Add cooked rice and mix gently.


      Enjoy carrot rice with papad.
