COCONUT MILK RICE

COCONUT  MILK RICE 

Ingredients:
Basmati Rice - 1 cup
Ghee - 1 t spoon 
Oil - 1 t spoon 
Cardamom - 1
Cinnamon Stick - 1
Fennel Seeds - 1/2 t spoon 
Cloves - 2 
Biriyani Leaf - 1
Green Chilly - 2
Onion - 1
Ginger Garlic Paste - 1 tbl spoon 
Tomato - 1
Salt as needed 
Coriander Leaves - 2 tbl spoon 
Mint Leaves - 2 tbl spoon chopped 
Coconut Milk - 1 cup
Water - 1/4 cup


      Wash and soak rice for 1/2 an hour.
      Heat butter in a pressure cooker and add cardamom, cloves, cinnamon, biriyani leaf, fennel seeds.
      Add onion, green chilly and sauté until soft.


      Add ginger garlic paste and and cook until sauté in low flame until cooked.


      Add chopped tomatoes, coriander leaves, mint leaves, salt and mix well.


      Add drained rice and mix gently.
      Add coconut milk, water and allow it to boil.
   


      Close and pressure cook for 3 whistles in medium flame.
      Once pressure releases open the lid and mix gently.


      Enjoy coconut milk rice with raita and chips.
