PALKOVA

PALKOVA 

Ingredients:
Milk - 1 litre 
Sugar - 3 1/4 tbl spoon 
Cardamom Powder - 1/4 t spoon 
Ghee - 2 tbl spoon 


      Take a wet heavy bottomed vessel wash and fill with milk.
      Cook in low flame stirring occasionally until it reduces to 1/4 th.



      Scrap the milk solids from corners and mix well.
      Once the milk reduces to 1/4 th, add sugar, cardamom powder and mix well.


      Stir in low flame until lightly gooey.
      Add ghee and mix well.


      Switch off the flame when Palkova is still creamy.


      It thickens when it cools. So switch off accordingly.
      1 litre milk gives approximately 1/4 kg palkova.


      Enjoy Palkova and store in refrigerator.
