BITTER GOURD FRY / PAAVAKKAI PORIYAL

BITTER  GOURD FRY

Ingredients:
Bitter gourd - 1/4 kg
Butter Milk - 1 cup
Salt as needed 
Coconut Oil - 1 tbl spoon 
Mustard Seeds - 1/2 t spoon 
Onion - 1
Red Chilly Powder - 1/2 t spoon 
Turmeric Powder - 1/4 t spoon 
Coriander Powder - 1 t spoon 
Curry Masala Powder - 1/2 t spoon 


      Wash and cut bitter gourd into thin slices.
      Soak in buttermilk for 15 minutes and remove the bitter gourd so that the bitterness gets slightly reduced.


      Add coconut oil and allow mustard seeds to splutter.
      Add chopped onion and fry until soft.
      Add the drained bitter gourd and roast until half cooked.


      Add salt, turmeric powder, chilli powder, coriander powder, curry Masala powder and mix well.


      Sauté in low flame until the bitter gourd gets roasted well.


      Have bitter gourd fry with rice and rasam.
