VEGETABLE BRINJI
Ingredients:Ghee - 1 tbl spoon
Fennel Seeds - 1/2 t spoon
Biriyani Leaf - 1
Onion - 1
Green Chilly - 1
Ginger Garlic Paste - 1 t spoon
Tomato -1
Mint Leaves - 10
Coriander Leaves - 2 tbl spoon chopped
Salt as needed
Carrot - 1
Beans - 5
Green Peas - 20
Seeraga Samba Rice - 1/2 cup
Coconut Milk - 1 cup
Water - 1/4 cup
Bread - 4
Cashewnut - 5
Wash and soak rice for 1/2 an hour.
Heat ghee and roast biriyani leaf and fennel seeds.
Add chopped onion, green chilly and sauté until transparent.
Add ginger garlic paste and cook until raw smell leaves.
Now add chopped tomatoes, mint, coriander leaves and cook cook until mushy.
Add chopped vegetables and cook for 5 minutes.
Add rice, coconut milk, water and allow it to boil.
Roast cashews and bread in a dosa tawa until golden.
Once the rice and water comes to same level, add cashews and bread pieces on the top.

Close the lid and simmer for 10 minutes.
