COCONUT MILK VEGETABLE KURUMA 

Ingredients:
Oil - 1 tbl spoon 
Fennel Seeds - 1/2 t spoon 
Onion - 1
Salt as needed 
Turmeric Powder - 1/4 t spoon 
Chilly Powder - 1 t spoon 
Coriander Powder - 1 t spoon 
Garam Masala - 1/2 t spoon 
Coconut Milk - 1 cup
Cashewnut - 5
Carrot - 5
Beans - 10
Paneer - 100 gm
Coriander Leaves - 2 tbl spoon 
To Grind 
Tomato - 1
Garlic - 5
Ginger - 1 inch piece 
Mint Leaves - 10


      Grind the above ingredients to a fine paste and keep aside.



      Heat oil in a pan and fry fennel seeds, onion until golden.
     Add ground paste, salt, turmeric powder, chilli powder, coriander powder, garam masala and simmer for 5 minutes.


      Add chopped carrots, beans, 1/2 cup water and cook covered until soft.


      Add coconut milk, cashew paste and simmer for 10 minutes.




      Roast paneer with butter in a dosa tawa and add to the gravy.



      Garnish with coriander leaves and enjoy creamy coconut milk gravy with chappathi.
