HOMEMADE  BUTTER 

Ingredients:
Malai from milk
Curd -  1 tbl spoon 
Ice Water - 2 lts


      Boil milk and collect malai from the top.
      Store the malai for atleast 2 months in an airtight container in freezer.


      Once we got enough malai, unfreeze it, add curd and mix well.


      Allow to ferment overnight.

       Take 1 cup ice water in a mixer. Add 3 tbl spoon of malai and grind for 2 minutes leaving intervals.



      Butter separates and starts to float in buttermilk.
      Remove the butter and make balls using your hand.
      Take 2 bowls with ice water. Place the balls in 1 st bowl. Wash the butter and transfer to the 2 nd bowl.



      Wash again and transfer the butter to a container.


      Repeat the process until all the malai is finished.

      Refrigerate the butter in an airtight container until use or make ghee out of it.
